Baked Banana Bites (+ video!)

If you follow me on Instagram and Snapchat (username: ohmydrifter), you know last week I dog sat for my neighbors. Said neighbors just so happen to have a BEAUTIFUL kitchen (proof), so I took advantage of their gorgeous countertops and natural light and made a recipe! They say when in Rome, do as the Romans do. I say when you’re in a photogenic situation, take all the pictures you can!

When my parents went to Hawaii in December, they toured Big Island Bees and bought a jar of honey. I loved the packaging and didn’t let my parents open it up until I used it in a recipe. Four months later, we have a recipe! And my parents can have their honey! Although the honey is completely optional if you’re keeping things vegan.

Baked Banana Bites (+ video!)

There’s something I really love about the smell of baked bananas. Baking a plain ol’ banana with nothing else makes the entire house smell like banana bread. These little sandwich bites are the perfect sweet treat for whenever! (My mom got experimental with these guys, froze some, and then blended them up in a smoothie with almond milk. She said it was amazing. I believe her.)

BAKED BANANA BITES
(serves 2)

Ingredients:

  • 2 bananas
  • Almond butter
  • 4 dates
  • Nuts (any nuts you’d like! I used almonds, walnuts, and pecans)
  • Honey (optional)

Procedure:

1. Slice bananas in half lengthwise. Then cut into four equal parts.
2. Assemble each banana bite as you would a sandwich in this order:

  • Banana
  • Almond butter
  • 1/2 date
  • Banana
  • Almond butter
  • Nut

3. Place each banana bite onto a baking sheet lined with parchment paper. Preheat oven to 425ºF.
4. Bake for 15-20 minutes. You’ll know when they’re ready when the bananas have gotten a gooey marshmallow-y texture.
5. Take banana bites out of oven and allow to cool.
6. After cooled, place on plate and drizzle on a lil’ honey.
